White Beans Salad (Piyaz)

Such a wonderful taste… if you like beans, of course. Just try it for tonight’s dinner and tell us what you think. I am sure you will not regret.

  1. In a big bowl, toss boiled beans, chopped onion, chopped green pepper, chopped roasted red pepper,  and diced tomatoes. You may also add chopped parsley.
  2. Then, add olive oil, lemon juice and salt to your taste. Stir all the ingredients.
  3. Transfer to a serving plate.
  4. Decorate with a boiled egg and olives if you prefer.

Ingredients

  • 2 cups boiled white beans
  • 1 big onion, sliced or chopped
  • 1 roasted red pepper, chopped (optional)
  • 2 banana peppers, chopped
  • 2-3 tomatoes, diced
  • 3-4 tblsp olive oil
  • 1/4 cup lemon juice
  • 1 hard-boiled egg
  • 1/4 cup chopped parsley (optional)
  • salt to your taste
