Super Puffy Rolls (Pastane Poğaçası)

The best thing to do on your way to work in Turkey is to stop by a bakery shop and have at least one of these puffy rolls. This is what I crave for most of the time… Luckily, I know how to make it at home. This just saves me a trip to Turkey:)

  1. Preparing the dough: First, let the yeast wait in the warm water and milk mixture for about 10 minutes.
  2. Then, put the vegetable oil, sugar and salt in a large deep  mixing bowl and mix them all. Then, add the yeast mixture to that.
  3. Add 6 cups of flour one by one and begin kneading the dough. Keep kneading he dough until it gets a soft. Cover  the dough up and let iit wait for 30 minutes in a warmer place at home.
  4. Once the dough gets double of its size at first,  it is well-prepared for baking.
  5. Take egg-size pieces from the dough. Round up these pieces. (See Picture 1) Then, flatten the rolls  in your palm or on the cuting board using a roller. Put a tea spoon of feta or mozarella cheece as filling in the middle of each patty and roll the ends up to form a roll. (See Picture 2&3.)
  6. Repeat the same thing for the rest of the dough. Spread egg yolk on top of the rolls. By drawing a plus with a fork on top of the rolls, you can give them the look on Picture 4.
  7. Preheat the oven at 350 F degrees and bake the rolls for about 30 minutes or until they turn golden brown.


  • 1 cup of warm water
  • 1 cup feta cheese or mozarella cheese
  • 1 cup of warm milk
  • 1 tea spoon of salt
  • 1 cup vegetable oil
  • 6 table spoons of sugar
  • 1 egg yolk
  • 2 heaping table spoons of dried yeast
  • 6 cups of flour
